Università del Caffè in Malaysia

Trieste, February 4, 2010 -Ten years ago illycaffè founded the Università del Caffè in Trieste, Italy to promote and spread the culture of quality coffee in the world. Today illy makes a further step forward, opening a new training facility in Kuala Lumpur, Malaysia. Like those already opened worldwide, it will be a center of excellence to improve coffee culture through attention to all aspects of coffee, from the plant to the cup.
Roberto Morelli, Director of caffè culture and Università del Caffè in Trieste, Moreno Faina, educational program manager and coordinator of professional classes in Trieste, Fabrizio Vergamini, manager of economic and trade affairs at the Italian Embassy, Paola Roncolini, Director of the Italian Trade Commission in Malaysia, Jacques Cosset, manager of the Università del Caffè in Malaysia, and Evelyn Lee, Director of Università del Caffè in Malaysia were present at the Kuala Lumpur inauguration.
The opening statements were presented by Fabrizio Vergamini, Jacques Cosset and Roberto Morelli, who said “Malaysia is a remarkable country for its economic energy and cultural brilliance where the Italian lifestyle and “Made in Italy” are major attractions. This is one of the reasons why the caffè culture, more specifically that of Italian espresso is spreading. The Università del Caffè will stimulate, feed and enrich this movement with content. Our center in Kuala Lumpur is one of the world’s most spacious, well structured and organized. We are working with important academic partnerships to integrate our activities with the capital’s university programs for future Malaysian chefs and restaurateurs.”
Various levels of courses are offered at the Kuala Lumpur Università del Caffè, for connoisseurs as well as professionals in the food and beverage industry. Participants will learn all about coffee, expanding both theoretical and practical knowledge of the entire productive process, from the raw ingredient to the preparation of the best possible espresso.
A select team of expert docents trained in Trieste and Shanghai-Evelyn Lee, Ho Wei Kiat, Lee Choon Chew, Chee Kam Chien, Soo Alex, Timothy Jason Antony, and exceptional instructor Michael D’Alessandro, will focus on theory (history, botany and physiology) and methodology (techniques to make not only perfect espresso and cappuccino but also cocktails and remarkable pairings) as well as caffè machines, their maintenance, and fine tuning the tools to learn to taste caffè like a sommelier.
Participants can either sign up for one course to earn an attendance diploma, or complete the entire program for a Caffè Artist and Manager diploma.
• Coffee Expert
This course takes a professional approach to the world of coffee, providing participants with the in-depth theory and practical knowledge to give customers an optimum quality product.
Among the topics discussed: history, physiology, and botany of coffee, basic theory to become a true caffè “sommelier”, theory and practical knowledge to create recipes based on cappuccino and caffè, with or without alcohol. The course illustrates the details of coffee processing and transformation, providing the rules to prepare, recognize and evaluate a perfect espresso.
• Creative Coffee
A highly specialized practical course where participants learn the correct techniques to emulsify milk to optimal consistency to create perfect cappuccino with original decorations.
Recipes are supplied for new caffè preparations: hot and cold, alcoholic and non-alcoholic, enhanced with new aromas and flavors like cacao and cream, for all seasons and occasions.
• Master Barista
The course was created in collaboration with World Barista Championship champions, and one will be present during some of the lessons.
